Fast breakfasts are always something I on the hunt for, but it’s hard to get away from the standards. This Mushroom Hummus Toast situation is a total breath of fresh air in the breakfast world. It’s ready to go in just a few minutes, hearty and filling, and has just a few ingredients.
For my version, I used a mix of cremini and shiitake mushrooms, but honestly any mushroom should work. I think a variety is nice, but if all you have is white button mushrooms, they will do the trick!
For the hummus, I used a classic hummus, but a roasted pine nut variety or even a spicy version would’ve worked great also.
The biggest tip on this hummus toast is to make sure you use good bread that can hold up to a big schmear of hummus and a bunch of mushrooms. Flimsy bread is a NO GO for this guy.
Mushroom Hummus Toast
Ingredients
- 12 ounces assorted mushrooms
- 1 tablespoon butter
- 1 clove garlic, sliced thin
- ¼ teaspoon red pepper flakes
- 1 teaspoon fresh sage
- 4 pieces sturdy sourdough bread
- ½ cup hummus
- Salt and pepper
Instructions
- In a medium skillet, add butter over medium heat. Once melted, add all chopped mushrooms and cook until they release their liquid and start to brown. Don’t stir them too much. You want them to get some color. They should cook for 5-6 minutes.
- Once mushrooms are almost done (wilted, browned in parts, and tender) then add garlic, sage, and red pepper flakes along with a pinch of salt and pepper. Stir together and cook for 30 seconds. Then turn heat down to low and keep warm.
- Toast the sourdough bread. Smear each toast with about two tablespoons of hummus.
- Top toast with mushrooms and serve while warm.

How to Cook the Mushrooms
For this recipe, keep the mushrooms in pretty chunky slices. I did slice them, but you want thick slices. One mushroom should be 3-4 slices. You could also just quarter the mushrooms which would have a different texture, but work well.
I like my mushrooms cooked in butter, but you could use any fat for them.
Cook them over medium-high heat until the start to brown and lose their liquid.
Once they are wilted, add the sage, garlic, and red pepper flakes. Turn the heat down to low once you add these ingredients so they don’t burn.
Keep the mushrooms warm while you make the hummus toast!
How to Make Hummus Toast
There’s really only one tip you need to know here: Use good bread. I would argue that probably any pre-sliced bread isn’t a great idea. Buy a nice loaf of sourdough or something really rustic for this toast. Slice it thick and toast it up. Then give it a good amount of hummus. I would say around two tablespoons per piece of toast is good, but no need to measure.
Then pile on the mushrooms and season with a little salt and pepper. Perfection!
For a quick winter breakfast, it’s hard to be this Mushroom Hummus Toast.

I wish I was able to overcome my disgust when it comes to mushrooms, but this tosh looks so yummy that it is definitely worth trying.
