I love many things about being a parent, but one of the most fun things is watching my near-three year old get attached to books. There are certain books that have to be read regularly, but then there are certain books that not only have to be read but have to stay within arm’s reach!
One of Theo’s personal favorites is a book called Dragons Love Tacos. I have to admit, I enjoy it as well. So much so that I couldn’t help but cook some tacos that I know dragons would love (and therefore I could probably pressure Theo into trying).
If you aren’t familiar with the intricate plot of “taco book,” it goes like this: Dragons love tacos. But they don’t like spicy salsa. That’s pretty much it.
So, I made some dragon-friendly (and kid-friendly) fish tacos using Dr. Praeger’s Lightly Breaded Fishies and a simple corn and pineapple salsa. It’s the kind of meal that can be tossed together on a whim any day of the week and I think you’ll find that adults love them just as much as kiddos (although maybe I added a few dashes of hot sauce to mine)!
Kid Friendly Fish Tacos
Ingredients
- 8-10 small flour tortillas
- 10 oz. 1 package Dr. Praeger’s Lightly Breaded Fishies
- ½ cup sour cream
- 1 avocado, diced
Not Spicy Pineapple Salsa:
- 2 cups diced pineapple
- 1 ear sweet corn, cooked
- ½ cup diced red onion
- 1 lime, juice only
- 1 tablespoon minced cilantro
Instructions
- Preheat oven to 425 degrees F. Cook Lightly Breaded Fishies according to package. They should be crispy on the exterior when done.
- Meanwhile, make pineapple salsa by microwaving ear of corn (in the husk) for 2 minutes on high. Then peel and chop off kernels. Stir together with other salsa ingredients and season with a pinch of salt.
- Assemble tacos by spreading a little sour cream onto a tortilla. Top with avocado, cooked Fishies, and a few spoonfuls of salsa.

Kid-Friendly Fish Tacos
Here’s the book that must be read every single night. Theo literally sleeps with it most night. Anytime I can use a popular book as the basis for a meal, I know he’ll probably eat it. Kids are easy.
I use the Lightly Breaded Fishes from Dr. Praeger’s for the fish part of these fish tacos. They bake up easily and quickly and get really crispy. Plus, I just love the ingredient list in these. It’s all good stuff that I can pronounce and feel good about feeding my kiddos.
I just baked them according to the package. Couldn’t get easier!
While the fishies baked, I mixed up a quick pineapple and corn salsa. This stuff was addictive even for adults. Of course, I would’ve loved to add some spice to it, but to ensure that all kids would eat it (and dragons), it’s best to leave the spicy jalapenos out.
To make a taco, layer on some sour cream and avocado, then a few fishies, and then the salsa. Easy dinner!
Theo absolutely loved these and even our little 9-month old Darby had a few nibbles of the fish. Betsy and I even ate the exact same tacos but just added a little hot sauce to them.
Easy, fast, healthy, and delicious.
