Caramelized onions are one of my favorite flavors in the kitchen. It’s a kitchen miracle how you can start with something so basic and end up with something so sweet and complex. There are many ways to get to the caramelized onion, most require lots of stirring and maintenance.
I decided to bypass all that for this lighter caramelized onion dip by using the old slow cooker! By cooking the onions overnight in the slow cooker, you can pretty much forget about them until the morning.
Two tips on caramelizing onions this way: First, it does help to stir them once or twice as they cook. Yes… it’s annoying to get up in the middle of the night to stir onions, but they will cook more evenly this way. It’s not 100% required, but you’ll end up with a more even dip if you can.
Second, while these onions cook, they are pungent! If someone in your house is averse to onion flavors, you might consider moving your slow cooker outside while these cook. I know that sounds crazy, but if you have an exterior plug somewhere by your house, you can cook them outside without stinking up your house!
Once you cook the onions down, it’s a simple dip that I like to lighten up with Greek yogurt rather than all sour cream or cream cheese. Slow Cooker Caramelized Onion Dip

Ingredients
- 2 large sweet onions, sliced
- ¼ cup olive oil
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder
- 1 ½ cups Greek yogurt
- ½ cup sour cream
- 1 cup grated cheddar cheese
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley, garnish
- Simply7 Hummus Chips, for serving
Instructions
- Slice onions in half, peel, and then cut into thin slices. Add all onion slices to a slow cooker with olive oil, salt, and garlic powder. Stir to combine.
- Cover slow cooker and cook on the lowest setting (usually warm or something similar) for 8 hours. Stir halfway through if possible, for even cooking.
- When onions are caramelized, stir in Greek yogurt, sour cream, cheddar cheese, and Worcestershire sauce. Cover and cook for another 15-20 minutes until ingredients are warm and cheese is melted.
- Season dip with salt and pepper to taste and sprinkle with fresh parsley.
- Serve dip while warm with Simply7 chips!

Slow Cooker Caramelized Onion Dip
This recipe starts with just a few ingredients. Mostly onions! Lots of sliced onions! I just chop my onions in half and then slice them up. Add some olive oil and garlic powder now as well.
Once that is all stirred together, set your slow cooker on the lowest setting possible. This might be labeled “Warm” or something similar. Check your manual, but you want it very low.
Let these cook overnight! As I said in the intro, I’d recommend getting up and stirring them once or twice through the night just to make sure they are cooking evenly. This wasn’t a big deal for me because I was on baby watch anyway, but you could let them go without stirring them. They just might be slightly uneven.
Also, pro tip! If you are bothered by the smell of onions, I’d recommend moving your slow cooker outside! They will still cook fine (assuming you have an out-of-the-weather place to put them) and will keep your house from smelling like onions!
In the morning you’ll have some beautiful onions!
When you’re ready to make the dip, stir together the other ingredients!
Let that heat up in the slow cooker for about 15-20 minutes just to melt the cheese and combine flavors and you’re ready to rock!
This dip is perfect for a light game day dip and has huge flavor!

Hmmm…. I wonder if the onions in the crockpot would be an easier way to do french onion soup? Sounds like it might work! I might have to try that soon – caramelizing onions the old school way just takes soooo much time!
