If I have my choice between pancakes and waffles, I choose waffles 9 out of 10 times. I just find them more interesting. They have better textures and flavors and toppings are more open. If you are a waffle lover like me, you just have to try these blue corn & honey waffles!

These are not weak waffles. They aren’t flimsy or soggy. They are sturdy. The blue corn in them leads to a crispy exterior and they would hold up fine to almost any topping. Honestly I think you could even serve them with something super-savory like chili!

For this post though, I kept it simple and served them with a quick chili honey butter and a drizzle of extra honey. They were very delicious!

These are grown up waffles. Slightly crunchy and dense with just enough sweetness. I like to serve mine with a chili honey butter!

Equipment

Ingredients 

  • cups blue cornmeal
  • 1 cup all-purpose flour
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • cups buttermilk
  • ¼ cup honey
  • 2 large eggs
  • ½ cup butter, melted

Chili Honey Butter

  • ¼ cup butter, softened
  • 2 tablespoons honey
  • 1 teaspoon chili powder

Instructions

  • Mix together blue cornmeal, flour, baking powder, baking soda, salt, and brown sugar. (You can sub regular cornmeal for blue cornmeal if you can’t find it.)
  • In a separate bowl, whisk together buttermilk, eggs, honey, and melted butter.
  • Stir wet stuff into dry stuff.
  • Add about 1/2 cup of batter to a preheated waffle iron (spray with nonstick spray if necessary). Cook until done (different times for different waffle irons).
  • Finished waffle should be browned and crispy on the outside and cooked through.
  • Cook all waffles.
  • Serve warm waffles with chili honey butter and extra honey to drizzle (or syrup if you want)!

Blue Corn Honey Waffles

Blue cornmeal, if you’ve never had it, is a bit heartier than yellow cornmeal. It has a subtly different flavor and texture, but you could absolutely substitute normal yellow cornmeal in these waffles and proceed with the rest of the recipe.

The color of the blue cornmeal is really cool though so if you can find it, try it out! Bob’s Red Mill makes a great blue cornmeal and it’s what I used for this recipe.

To start the waffles just whisk together your dry ingredients!

Then in a separate bowl, whisk together the wet stuff. Don’t skimp on the honey!

Then mix everything together! It should be a pretty thick batter, but still pourable. If it seems too dry, add more buttermilk.

Add about 1/2 cup of batter to your preheated waffle iron and go to town! Depending on your waffle iron, they should cook in 3-5 minutes. They are done when they release from the waffle iron easily and are nicely browned on the edges.

For serving these, I mixed together some softened butter with chili powder and honey for a delicious topper!
