Betsy and I both went through phases where we were packing either sandwiches or wraps with hummus on them for lunch pretty much daily. It’s a nice change-up from mayo or mustard. Because of this, I was pretty pumped to check out their new Sabra Spreads.
I tried all three of them, a sea salt and pepper, a garlic herb, and a honey mustard. All of them were really great. They were super flavorful and had a different, smoother texture than their normal hummus, which is great for sandwiches! I love the squeeze bottle convenience also!
For me though, the winner was the honey mustard version and I built this balsamic roasted pork sandwich around that flavor profile. It’s a pretty amazing sandwich!
Balsamic Roasted Pork Sandwiches

- Preheat oven to 350 degrees F. Rub pork roast with olive oil and the dry rub mix (salt, pepper, coriander, oregano). Roast pork for 20 minutes.
- While the pork roasts, combine the honey and balsamic in small pot over low heat. Let simmer for 5 minutes to thicken.
- Remove the pork from the oven after 20 minutes and brush with the balsamic mixture. Keep roasting, basting every five minutes, until it reaches a temperature of 150 degrees F. in the center of the pork. The time will vary depending on thickness. Please use a meat thermometer.
- Remove pork from oven and cover with foil. Let rest for 10 minutes and then slice thinly.
- Make sandwiches by spreading on honey mustard spread, sliced pork, fresh tomato and red onion, and salad greens.

Balsamic Roasted Pork Sandwiches
The only real work for this sandwich is the pork. Find a good pork loin roast that’s 2-3 pounds and rub it well with the rub mixture (salt, pepper, coriander, and oregano). It’s a simple spice mix, but the flavors will get amped up by the balsamic later, also.
Roast the pork for 20 minutes at 350 degrees F.
While the pork roasts, simmer the balsamic and honey over low heat for 5 minutes so it thickens slightly. Then remove the pork and drizzle it with the balsamic and honey mixture.
Check on the pork every five minutes while it roasts and spoon the balsamic glaze over the top. It should form a nice glaze on the pork.
When the pork hits 150 degrees F. in the very center remove it from the oven and cover it with foil. Let it rest for 10 minutes and then slice it really thin for the sandwiches. Remember that temperature is more important than look/feel. Some pink is just fine in a pork roast like this!

The honey mustard one is particularly nice with these roasted pork sandwiches.
Add a good squiggle of spread to a bun.
Top with a few slices of thinly sliced pork, red onion, tomato, and lettuce or salad greens and you are in serious sandwich business.

Hey Nick — this sounds great, but is the olive oil supposed to be part of the rub?

Hey Mike, I usually just drizzle with olive oil and then apply the rub. It kinda works like glue. :) Good luck!
