Easy Cheesy Rice & Beans
Starting the rice.
This skillet starts with sauteed onions and salsa in a skillet. This base gives the finished dish a really deep and wonderful flavor.
Add rice and beans and liquid and stir together. Cover the skillet and allow everything to cook until rice is tender.
Cooking the rice.
Don't forge the cheese! I like to add it right at the end after I've cooked and fluffed the rice. Cover the skillet and let the cheese steam so it gets super-melty.
