Phew! Betsy and I just had a heckuva move to the Denver area involving a uHaul reservation mess up (that ended up weirdly helping us), a urine-covered cat, and a very substantial and hellish trip to Ikea.
We are mostly setup in Denver now though and it is quickly setting in that we have no friends. HA!
That’s okay though because I have all you lovely readers to keep me company.
For my first post from Denver, let me drop some knowledge on you: Cauliflower is not French Fries. But, guess what. There is a recipe that makes cauliflower pretty darn tasty and, if I had the choice, I would say that I would order this Curry Roasted Cauliflower over French Fries 64% of the time.
Curry Roasted Cauliflower
Ingredients
- 1 large cauliflower head, cut into florets
- Olive oil
- Kosher salt
- Curry Powder
Instructions
- Preheat oven to 500 degrees Fahrenheit. Cut florets off of cauliflower and toss liberally with olive oil, salt, and curry powder. Add the cauliflower to a baking sheet in a single layer.
- Cover with foil and bake at 500 degrees F. for 15 minutes.
- Remove foil and continue to bake, stirring every 8-10 minutes, until the cauliflower is well-browned, about 30-35 minutes.
- Serve immediately!

Barely a Recipe
Because I sometimes do very illogical things, the week before we moved I ordered a slew of new books which arrived literally as I was packing books. Why did I not just have Amazon send them to my new home? These are questions that will never be answered.
One of the books I got silly-ordered was the first book from my long-time blogging friend Darya called “Foodist.” Aside from having a beautiful cover and being incredibly readable, Darya tossed out hints of this Curry Roasted Cauliflower recipe in the first few chapters. She sells it as a way to make cauliflower taste as good as French Fries!
I had to try it. The good thing about this recipe (and many of the recipes in this book which is more of a philosophy book then a cookbook) is that it’s dumb simple. You couldn’t screw it up if you tried.
Basically you just cut up a big head or two of cauliflower and spread out the florets in a baking pan.
For the seasonings, she doesn’t even specify amounts, but the word “liberal” comes to mind. You want olive oil, salt (kosher or sea) and curry powder. Sprinkle and toss liberally, people.
Preheat your oven to 500 degrees Fahrenheit and then cover the cauliflower with foil and bake for about 15 minutes so they start to steam.
Then remove the foil and continue to roast until the pieces start to brown around the edges, 30-35 minutes should do the trick. I like mine damn near burned.
They turn a little bit crispy and are very delicious. Betsy and I can polish off almost a whole head of cauliflower between the two of us!
I would absolutely say these Curry Roasted Cauliflower bites taste as good as French fries. They aren’t French fries exactly, but I would order Curry Roasted Cauliflower over French fries frequently if I had the choice.

I read a bunch of food/eating philosophy books over the years and my favorite tend to have a few key features:
1) They are easy to process. If you can’t make your way through the book, what good does it do?
2) They are gimmick-free. They might explain why you should eat vegetables and how to incorporate more into your diet, but they won’t say only eat green vegetables!
3) They are funny. This is personal preference but I hate up-tight writing.
To be completely honest, Darya nails all of these points. She obviously knows her stuff and the book is very well-researched, but it’s a breeze to read and take in.
If I had to summarize the book in one blog-sized paragraph I would say that it’s about learning how to recognize habits in our lives and then how to positively change those habits. The slant of the book is on health-related habits, but you can apply most of the advice to a wide range of things.
For example, if you find yourself craving sweets while you watch TV at night, it might not be that you are actually craving ice cream, but that you have a habit of eating while watching TV. Try a cup of tea instead and see if that fixes the craving?
Meanwhile, she’s hilarious. One of her footnotes, for example, reads: “Don’t confuse scientists (Ph.D.s) and medical doctors (M.D.s). Because it is not part of their training, the vast majority of M.D.s don’t know jack about nutrition.”
ZING.
If you are interested in forming better habits and possibly losing weight without dieting, this is a great book to check out. You should buy it.

My favorite weeknight meal is grilled tequila-lime marinaded tri tip (I use a large grill pan indoors), steamed broccoli, and a salad. Basically it’s boxed frozen chopped spinach cooked and drained, warm drained chick peas from a can, caramelized sliced onion, sliced parmasun cheese, dash of salt, pepper, and cumin poweder. Blend it altogether and enjoy.

Something I learned from my mom: spaghetti (hot or cold, whole wheat or regular-whatever!), shredded chicken, shredded carrots (you can buy that already done for you!), and julienned cucumber (OK, that’s more effort. Or cut it however you want). Each person puts whatever proportion of each that they desire in their bowl. Toss with whatever combination of soy sauce, balsamic vinegar, and hot sauce you want. We’ve advanced to also adding sesame oil and ginger oil in there also. Can prep most of it ahead of time and eat whenever! It was my mom’s go-to when my brother and I had various after-school/evening activities. We could all eat whenever each of us was ready.

My favorite and easy weeknight meal is zucchini fettucini. Just use a vegetable peeler to cut strips of the zucchini until you get to the seeded middle. saute the strips in olive oil for three minutes, flipping often and then top off with pasta sauce and you have a great “pasta” dish!

Our go to at least once a week healthy meal is tacos. While I normally wouldn’t say they are all that healthy, I think ours are because we use dear or elk meat that my husband has killed, both are very low in fat and are naturally organic. I use all organic, fresh local produce to make the salsa and guacamole and no cheese or sour cream. The shells are fresh soft corn shells made fresh every day at a local store and don’t need any oil to heat them up.

Greens, chard or kale or savoy cabbage, sauteed with onion and garlic. Toss in some cooked beans (okay if from a can) and sprinkle with a bit of red wine vinegar.
You can use any bean you have on hand. I always have cannellini beans on hand, so I tend to use those.
To make this a little more substantial, top with a poached or fried egg.

A great weeknight meal that I am craving and that is easy to put together is a an assembled salad. I use a big platter and pile it high with halved hard boiled eggs, leaves of lettuce, sliced avocado, tomatoes and some steamed or roasted and fresh vegetables that are in season such as beets, asparagus, potatoes, green beans. I mix up a simple dressing, right now, it would be full of chives from the garden with shallot, oil, vinegar, salt and pepper. The whole thing goes great with bread and butter and a glass of wine.

My favorite healthy, quick, go-to meal changes all the time but my most exciting recent food discovery is soba! These noodles take literally 5 minutes to cook, in which time I might fry an egg sunny side up to serve as a nice protein component & add some delicious silky egg yolk to the sauce. Add some chopped cilantro, shredded carrot, peanuts, lime, olive oil, rice vinegar & sriracha and you have a very satisfying & zesty meal. My favorite weeknight meal is something we’ve taken to calling “Cabbage Noodles.” It’s just fried green cabbage served over rice noodles in a quick sauce of chicken bouillon, garlic, cornstarch and cayenne pepper. My favorite weeknight meal is (really) a boxed chef boyardee pizza mix.
I follow the crust directions (easier than sneezing). I “doctor it up” by adding fresh oregano, basil, whatever. The next level, after the supplied pizza sauce, is anchovies and multi colored peppers. I use some of the grated parm they give you, but I dress it up with goat cheese or some other good, sharp parm. I make the crust super thin and cook it pretty dark. To top it off, I add arugula with olive oil and fresh lemon. It may sound daunting, but you just go ahead and try it and tell me that’s not one of the best damned pizza’s you ever had!!!!

I love to make a quick stir-fry with veggies (sweet potato! kale! onion! zucchini! mushrooms!) chopped super small and then cabbage strips added either at the end or just fresh on top… maybe some fresh tomatoes and avocado, plus raw hemp hearts, then eaten over rice, or in a soft, locally-made corn tortilla. :) I alternate between curry flavors, asian peanut sauce (homemade in the pan), soy sauce/sriracha, and mexican flavors.

My favorite simple and healthy weeknight meal is….a green smoothie :-/ Try to avoid the fruits in the evening, so mostly vegetables (kale, spinach, cucumber, and then maybe some organge juice or yogurt to sweeten it a little). All frozen ingredients. Sounds lame, I know.

Because I work retail, every meal has to be quick and easy. Because I have an 8yo, every meal has to be healthy. My favorite is seitan tacos (we make 8 single meal sized batches of seitan at once so we’ve always got it at the ready) with salsa criolla. We’re actually making Indian spiced tacos and salsa criolla for dinner tonight! We generally serve a mix of raw veggies or avocado slaw with tacos and even making salsa and slaw, the whole deal is ready in about 20 min

This almost sounds more like a replacement for popcorn – which I love and can’t have anymore since I’m gluten, corn and soy intolerant – rather than french fries. I CAN have fries, I like fries (especially seasoned & covered in cheese, guilty treat) so I’ll eat ’em.
My favourite healthy dinner? Salad, chicken and Renee’s tangerine-lime dressing.
The salad has romaine, head lettuce, the prepacked spring mix, at least 3 veggies, hopefully an apple and a tangerine and a sprinkle of cheese.
The chicken is done on the BBQ if I’m at the cottage, usually with a BBQ sauce. Or it’s seared then steamed in the pan with watered down BBQ sauce or this lovely peach stuff I found tucked away in a small store called Foodies. Love that place.

One of my go-to “week” meals is lemon and sage chicken salad. Broil the chicken with herbs, chunk it, and toss with Greek yogurt, diced apple, celery, lemon juice, garlic/onion/salt/pepper, and sage. Sometimes I bake prosciutto and add that, too. Stuff it into a pita or over lettuce and it’s good to go–plus makes great leftovers for lunch the next day.

My favorite weeknight healthy and easy meal is spaghetti squash marinara. It’s simple to cut in half and toss in the oven. If I don’t have any frozen homemade sauce, I just open a jar or if I am feeling like I want an little more time in the ktichen, I open a jar of diced tomatoes, add 1/2 chopped onion, 4 cloves smashed garlic and a stalk of basil (save the leaves for garnish) and let that simmer while the squash cooks. I usually bake both halves of the squash and when cool, fork them both into strands and freeze half so it’s ready to go for next time. Whatever fresh or frozen veggies go into the pasta sauce like mushrooms, peas, green onions, chunks of cruciferous veggies, etc. 1T shredded parmesan gives a great umami boost with minimal fat and calorie increase

We usually have spinach on hand so I would have to say spinach salad! It is versatile and I make variations depending on what I have in the fridge. I love it with pan-fried salmon.

I just found your website last night with the rainbow spring rolls on ziplist. I’ll try those next. I just made the cauliflower today and it was really good. I’m not a cauliflower fan, so thanks. I saw a couple of my quick dinners from other readers, but my new quick dinner is fried rice one night with whatever veggies I have, and the next night I use the leftover fried rice with a Japanese omelette filled with more veggies. Omg! These were so good! Made this tonight and my family cleaned it out! The only switch was the curry for Italian herbs… I thought since smashburger makes those delicious smash fries with olive oil and herbs that couldnt be bad… Well it was succulent! Love it will remake

My simple and healthy meal is eggs and avocado with a side of roasted root veggies.

Mine is steamed organic sweet potatoes (preferably smaller ones-) . Make a double layer of aluminum foil. Place washed sweet potatoes on foil, turn up sides, place a 1/2 cup water in foil. Make sure foil is crimped up on all sides so the water does not escape. Place in a 500 degree oven for 1 hour. Serve with tiny pats of butter (I use 1 tablespoon cut up in tiny squares), brown sugar & organic cinnamon! Then serve with mixed vegetables. If you are a meat eater, maybe pick up a rotisserie chicken to go along with it. Yummy!!!!
